Not overly sweet, just right as a side dish or snack.
Diet Type: Vegetarian
Ingredients:
  • 1 9" whole wheat crust, frozen
  • 2 pounds sweet potatoes, peeled, cut into 1" cubes
  • 1 tablespoon butter
  • 1/2 teaspoon cinnamon
  • 1 cup orange juice
  • 1/2 teaspoon salt
  • 1 tablespoon honey
  • 1/2 cup toasted, chopped nuts (optional)
  • Serves: 6
    Cooking Time: Over one hour
    Instructions:
    Mash potatoes with all ingredients. Spread into the unbaked crust. Sprinkle with optional topping ingredients. (Optional ingredients are not included in the nutritional analysis.) Bake at 375 degrees, uncovered, for 40-50 minutes.
