Spicy Lime Grilled Seitan Kabobs

Diet Type: Vegan

Cooking Time: Over one hour

Ingredients:

  1 16-ounce-jar Seitan (wheatmeat)
  15 whole button mushrooms
  1 green bell pepper, cut into chunks
  1 sweet onion, quartered, separated
  2 zucchini, cut into 1/2
  2 yellow summer squash, cut into 1/2" chunks
  3/4 cup lime juice
  2 tablespoons Barley Malt
  3-4 cloves garlic, minced
  1 tablespoon minced onion
  2 tablespoons finely chopped Cilantro (chinese parsley)
  1/4 teaspoon salt
  1/4 teaspoon black pepper
  1/3 cup extra virgin olive oil
 
Directions:

Mix marinade and pour over seitan and vegetables. Marinade at least 2 hours, preferably longer. Skewer ingredients and broil or grill until veggies are done to your likeness.
